These pancakes will blow you away. They’re easy to prepare, packed with potassium, calcium, fibre and protein. Healthy, simple, and delicious for the whole family. It takes about 10 minutes to prepare and you are done!
1 cup spelt flour
1 tablespoon date sugar
½ an avocado, mashed
1 cup almond milk
½ cup grated eggplants
¼ cup almonds, chopped
1 tablespoon avocado oil
- In a medium bowl, add flour and date sugar, and then toss to combine.
- Then, add mashed avocado and milk to the mixture, whisk well until we have a smooth batter and then fold in nuts and eggplants until just mixed.
- Next, place a large skillet pan over medium-high heat, add oil and when hot, pour the batter in the oil and shape each portion into a pancake.
- Cook each pancake for 3 to 4 minutes per side and then serve.
