PUMPKIN OATMEAL BREAKFAST

Incorporating pumpkin seeds is a tasty way to enjoy oatmeal recipes. Pumpkin oatmeal is a great source of vitamins A, C and E and minerals such as iron and folate. This breakfast can help boost your immune system and it's highly rich in fibre.

Ingredients 

1 cup water

1 cup apple juice

½ cup pumpkin seeds, roasted

1 teaspoon ground ginger

1 tablespoons dried apples

1 cup quick-cooking rolled oats

1 teaspoon dried dates

 ½ teaspoon ground nutmeg

 

Instructions 

  • In a saucepan add the water, apple juice, pumpkin seeds, ginger and dried apples together and bring to a boil for 10 minutes.
  • Add oats, dates, and nutmeg In a separate bowl.
  •  Then, add oat mixture to the saucepan, cook and stir continuously to incorporate the mixture for 5 minutes or until done.
  • Serve and enjoy!
