It's vegan healthy tofu with lettuce, a delicious colourful recipe. Tofu is a good source of protein and contains all nine essential amino acids. The addition of vegetables to the scramble provides a healthy and nutritious meal.


2 cups Firm Tofu

½ teaspoon garlic 

¼ teaspoon ginger

½ onion, powdered 

¼ cup parsley, chopped

¼  cup lettuce, chopped

¼ teaspoon turmeric 

Pinch kosher salt

¼ teaspoon White pepper, to taste

1 tablespoon nutritional yeast


  • Drain the tofu for a few minutes before using.
  • In a skillet, add the Tofu, mash with a fork and cook for 3 minutes.
  • Sprinkle the turmeric, nutritional yeast, ginger, garlic, onion powder, salt and white pepper, stir well until combined, cook for 2 minutes more.
  • Then, add the chopped parsley and lettuce to the skillet and mix very well.
  • Add vegan cream and salt, if desired and cook for another 3 minutes.
  • Fold in the fresh parsley and serve hot.
