Quinoa proves to be one of the healthiest and most nourishing foods. It's high in fibre and may boost blood sugar and cholesterol levels. Chickpeas are high in protein and fibre, which makes them a filling food that may help lower appetite and reduce calorie intake at meals.


6 tablespoons coconut milk

1 cup chickpeas, cooked

6 cherry tomatoes, chopped

1 medium onion, peeled, sliced

¾ cup vegetable broth

4 teaspoons spice mix

Pinch of sea salt

½ tablespoon pumpkin seed oil

¼ cup red bell pepper

¾ cup tomato sauce



  • In a large pan, on medium heat, add oil and warm, add onion, and then cook for 5 minutes until golden brown.
  • Add spice mix, add remaining ingredients into the pan, stir until mixed
  • Add chickpeas, stir until mixed, and then cook for 5 minutes over

medium-low heat until completely simmered.

  •  Serve Immediately.
