SWEET POTATO AND MIXED SEEDS

If you are looking for a healthy and simple main dish, full of vitamins and minerals, potatoes and mixed seeds are your best option. They contain resistant starch, which controls blood sugar level and is beneficial for gut bacteria.

 

Ingredients

1 cup sweet potatoes, peeled and sliced

1 tomato, thinly sliced

1 tablespoon sesame oil

1 tablespoons pumpkin seeds

1 tablespoon pine nuts

1 clove garlic

1 teaspoon turmeric

1 teaspoon black pepper 

Pinch of sea salt, to taste

 

Instructions

  • Boil the potatoes until soft
  • Allow the potatoes to cool for about 5 minutes
  • Fry the other ingredients in sesame oil for 5 minutes
  • Then, add the sliced potatoes and mix well and cover with a lid for about 10 minutes
  • Serve immediately and enjoy
