TOFU WITH SPINACH AND TOMATOES

Tofu is gluten-free and low in calories making it a perfect dish during the summer season, it's rich in iron and calcium. When mixed with spinach and tomatoes makes it a flavourful recipe.

Ingredients

300g Tofu, cubed

250 g spinach

4 ripe tomatoes, sliced

2 cloves garlic, chopped

1/2 teaspoons sweet paprika

2 teaspoons sesame oil

Pinch of kosher salt

1/2 teaspoon black pepper, coarsely ground 

Instructions 

  • Add oil to a pan on a medium heat
  • Add garlic to the pan and stir 
  • Then add the cubed tofu, fry and mix for 5 minutes
  • Add the spinach and steam for 30 seconds
  • Mix in the tomatoes and spices, and cook for 10 minutes or until combined 
  • Serve on a plate and enjoy
